Italian Sharing Breads

Ingredients
  • Kerala Grilled Vegetables
  • Par-baked bread loaf (ciabatta)
  • Spreadable butter
  • Cheese slices (Mozzarella)
  • Tomato puree
Method
  1. Mix Kerala Grilled Vegetables seasoning in  to the butter (ratio 1 tsp of seasoning to 3 tbl spoons of butter)
  2. Slice the par baked bread (3/4 of way through the bread)
  3. Spread the butter into the sliced groves
  4. Add a small spread of tomato pure to each grove, and a slice of cheese
  5. Cook on 200 for 6 minutes (less with smaller breads) and serve with fresh basil leaf and vine tomato garnish.
  6. Open the pitta (with care) – fill with cooked ingredients
  7. Roughly chop the fresh coriander leaf and garnish
  8. Top with minty mayonnaise and serve
